Peg makes an ass-whuppin' roast chicken. All I can do is mash the potatoes and clean up afterwards.

My lady makes an excellent roast chicken from a Cook's Illustrated recipe (http://americastestkitchen.com/printrecipe.asp?recipeids=568). It's butterflied, which reduces cooking time, and—this is the beautiful part—they line the the bottom of the broiling pan with thinly sliced potatoes. I'm not sure if it helps with the smoking (it might), but it produces a wonderful side dish—the roast drippings give the potatoes a delicious flavor—without using an extra dish.

i only do the roast chicken part of this recipe. it's come out great every time.

Sounds like a great recipe. As it turns out, most of the birds I cook are on the small side. I didn't realize the importance of this. Thanks for calling it to my attention.
